Porcini? Mushroom Recipes For Everyone!
I loooooooooove mushrooms. They're rich, "meaty" and have been used for medicinal purposes by every culture around the globe. I cook with them a lot, and use the medicinal extracts during cold and flu season. (More on that later - look for my Natural Flu Remedies post coming soon!)Because Monterey Mushrooms is a great brand, you can find them everywhere, and they were cool enough to co-sponsor my Detox Boxes for my 8 Week Detox Group, I thought I would share one of my favorite mushroom appetizer recipes here:Mushroom Celery Appetizer 2 tablespoons extra virgin olive oil1 garlic clove, thinly sliced2 cups thinly sliced mushrooms (any kind will do!)1/2 cup washed, dried, and thinly sliced organic celery leaves (you know, the part you usually throw out? keep it!)1/4 teaspoon sea saltInstructions:Heat the olive oil over medium flame and add the garlic. Stir well.When the garlic become fragrant, and before it starts to brown, add the mushrooms and stir well. Allow to cool for 5 minutes, stirring a few times. Cook until the mushrooms begin to brown.Add the celery leaves and salt, and cook for 1 additional minute.Serve this mushroom mixture over toasted bread slices, gluten-free pasta or polenta, or on crackers drizzled with olive oil.
